Caleb Chapman

Steven Curtis Chapman has been my favorite musician for years and years. I know all of the words to nearly all of his songs (and its only nearly because of his newest album) and I have a life-sized stand up poster of him that has been on stage with him at 2 concerts and been autographed. I'm not a stalker, he's just my favorite. Anyhow, I've often wondered what I would do if he retired and stopped putting out albums. No worries though, because there's another generation of Chapman's rocking and recording. Caleb is his oldest son (second of six children), and he plays guitar and has an EP out now. You can listen to all 5 songs on his website http://www.calebchapman.com/ and they are really really good. Looks like I will have all the Chapmans to listen to that I could want!

Amazing easy recipe!

We had this cheeseburger pie for dinner the other night and it is probably my new favorite. It came off the back of the Bisquick box...who knew.

1 pound lean ground beef (we used turkey)
1 large onion, chopped
1/2 tsp salt
1 cup shredded cheddar cheese
1/2 cut Bisquick mix
1 cup milk
2 eggs

1 Heat oven to 400F. Spray 9-inch glass pie plate with cooking spray. In a skillet, cook meat and onion over medium heat until browned; drain. Stir in salt. Spread in pie plate; sprinkle with cheese.

2 Stir all remaining ingredients in medium bowl with wire wisk until blended. Pour into pie plate.

3 Bake about 25 minutes uncovered or until knife inserted in center comes out clean.

4 ENJOY!!!
